You will need:
- Sausages (2-3 each depending on how big they are and hungry you are!)
- 1 large onion, thinly sliced
- 2-3 cloves of garlic, chopped (I like loads of garlic so 3 for me!)
- Veg of your choice and chopped into chunks ie peppers, courgettes (I used 1/2 yellow pepper and 1/2 red
- Beans or lentils of your choice. I only had chickpeas and kidney beans in the cupboard and used 1/2 to 3/4 tin of each
- 200ml passata. (Use tinned tomatoes if you have no passata).
- 1 splash red wine vinegar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil (if you have fresh herbs then even better!)
- Black pepper to taste
- 2 slices prosciutto ham (optional)
- Heat approx 1 tablespoon of olive oil in a pan on a medium heat.
- Add the garlic and onions and stir until they go brown.
- Add the sausages and cook until the skins have browned.
- Add the peppers and veg and stir for a couple of minutes.
- Add the passata and stir.
- Add the beans and stir
- Add the red wine vinegar, herbs and black pepper
- Allow to simmer for about 30 minutes.
- If the sauce dries up just keep adding a bit of water and stir.
- If using the ham, whack under the grill until it crisps
- Serve with either pasta or chunky bread/healthy garlic bread and snap the ham to sprinkle on the top.

If you had the luxury you'd let this cook for a couple of hours on a low heat or in the oven but in reality, we're busy and can't wait after a hard day's work!
